Nobody likes hidden fees and shocks on a bill.  Go for a plumber that gives you a cost for the complete job you need done rather than on an hourly basis.  A respected company will provide you a no cost quote well before beginning.  Get on paper what the job will cost you, the materials plus the cost of labor.  The work done should come with a warranty and make sure you have got the terms and conditions of the warranty or guarantee.
